Dark Chocolate Ice Box Cookies

Ok, before I start talking about the cookies, I have a little rant. Did any of you watch the new 90210 last night? Alright, before you judge me for watching bad television (it's like a trainwreck, I can't tear my eyes away), the people on the show were experiencing a heat wave, much like the current one we are experiencing right now (88 degrees in downtown the other day)...but then they get the day off school! WTF???!!! No one is giving me a day off because it's too hot. Ugh! The show is completely ridiculous and I know I need to stop watching it, but like I said, I also can't tear my eyes away. Anyway, it's been a while since I have put up a sweet treat (like, a week). Even when you are trying to eat light, you still have to give yourself some sweet things, because deprivation is evil! These cookies are perfect for satisfying an intense chocolate craving and they are pretty low in fat. Plus, you don't have to bake the whole batch all at once. I baked four for my first go round, and then froze the dough and baked a few more last night. I rolled my cookies in the sanding sugar that was sent to me a while back by the wonderful Heather. (Coincidentally, this particular brand just got a shout out on Saveur's 100 List). The pretty purple color kind of got lost in translation while baking, but I like the crunch it added to the cookies. I thought these cookies would have more of a shortbread kind of texture, but I guess with less butter, they ended up more cakey. They were really delicious. Two cookies are all that I needed to satisfy the chocolate craving and hunger pangs.

I did the recipe as stated except that instead of using vanilla paste, I used vanilla sugar. The original recipe can be found here.

I love it when you can freeze the dough for later. I have lemon butter cookie dough in the freezer right now. Some days you just need a home-made cookie in a hurry.

Ahhh you are killing me! I'm on a five-day chocolate hiatus (yes, I know, deprivation is evil!) and between this post and the recipe for Milk's ooey gooey chocolate cookies in the LAT today, I'm going crazy!

Maybe I need to take a day off from work because of the heat?

Diana, I think you should take the rest of the day off if. It's too hot to work :) I also think you should go back on chocolate, immediately.

Maybe the heat is getting to MY brain too :)

Sounds great! Who doesn't love chocolate cookies? They sound so easy too!

I haven't watched the new 90210...I just know it will never compare!

You had me laughing at deprivation is evil, it couldn't be said any better than that. I think you deserve a day off- the heat from cooking these delicious, decadent cookies!! Yummy.

umm, i once had a dentist cancel my appt because of the heat. are you kidding? these cookies totally would've made my day, though!

I love those shows too. I'm not into 90210, but I am into that cheesy one on ABC called 'True Beauty'. I know I know....
Cookies look good though and I love Saveurs 100.

Haha Dawn, my friend produces that True Beauty show. I am sure he will be happy to know you watch it. I'm gonna have to say nay to Millionaire Matchmaker though :)

i love cookies - especially when the dough saves so well. these sound tasty. i wish i had a day off because the weather was too hot :) or, here... more likely cold.

Never got the day off during a heatwave either. But we're hearing about kids getting out of school when it's too COLD. THAT we can understand...maybe.

Deprivation is indeed the devil's work. I like the idea of freezing the dough - I know this, but somehow it never 'clicked'. That's exactly what I'm going to do next. The cookies look divine.
